Lasagna_and Salad


This weeks meal with a salad was salad with a vegetarian lasagna. We had been out and walked 9 miles on the Ribbleway in Lancashire, so this meal was filling but refreshing.
SALAD
This was made from chopped lettuce, chopped spring onions, black grapes, sliced cucumber, water cress and chopped tomatoes.
I topped it all off with a salad dressing made from olive oil, balsamic vinegar and Dijon mustard. It provided a tangy sharp flavour.
We were so hungry after the walk I could have eaten it all again.

Salmon salad


Salad this week involves getting our weekly dose of omega 3. I use oily salmon fish for this and also linseed oil as part of a salad dressing.

This salad which is really tasty is also packed with what we are calling the UK super foods, WATERCRESS and BLUEBERRIES.

My salad consists of a salad ring of lettuce, spring onions, blueberries, watercress and cucumber.
The inner area has salmon on top of new boiled potatoes.
The salmon was fresh salmon cooked in the oven on a high heat for about 10 minutes. I added some garlic and chilli sauce to the salmon, salt and pepper and a few slices of Chorizo sausage.
I made a dressing for the salad and potatoes from flax oil, red wine vinegar and Dijon mustard to add a good bite .
It was a good combination . This salad would be good as a salad starter to a meal. I would use salmon, chorizo, watercress, blueberries and a garlic and chilli dressing for a starter.
