Ham and Corn Salad

Well even though the weather seems to be turning and Autumn is upon us we are still having salads. This is Ham and Corn Salad.
This is a really quick meal.
In the centre of the plate my usual new potatoes and steamed broccoli.
The main salad element is sliced lettuce, mustard cress, yellow sliced pepper, chopped white onion and sugar free tinned corn. I topped with roast ham.
I made a dressing with olive oil, Dijon mustard, salt and pepper and red wine vinegar. Omit the oil or put in less to aim for a weight loss diet.
This salad would be good as a salad starter or as I have had it as main course salad.

Tuna salad

The healthy salad this week is Tuna salad. I am off to Chester for a few days break so this is a use up what is in the store cupboard and the fridge.
A circle of chopped lettuce, chopped yellow peppers, chopped white onion, grated carrot, white grapes and a few stuffed green olives started the salad off.
Sliced cooked new potatoes in the middle. I put a dressing of olive oil and red wine vinegar on the warm potatoes and the outer salad.
This was topped with some steamed broccoli.
I topped off that with canned tuna. It was the type in spring water so less fattening than that in oil and less salt than the brine versions.
I topped this with slices of egg.
Serve with fresh bread if you like and anchovies would make a tasty addition. Also feta cheese would make a tangy addition.
I think this could be a good starter or a good option for those on a diet to loose weight. it certainly is healthy. My only hesitation is that tuna are being fished out of the ocean so it may be my last tin until things improve. Also too many other creatures are lost in the fishing process so again I may call it my last and from now on just go for farmed fish that are sustainable.
An alternative for the tuna is tofu in a marinade or quick fried.

Salad Nicoise Recipe

Salad Nicoise is a salad I have been making for years it is a French classic but there are no hard and fast rules to making it. I tend to use what I have in.

My Salad Nicoise above is made from new potatoes, diced cucumber, sliced radish, chopped tomatoes, chopped spring onions, sliced iceberg lettuce, one hard boiled egg per person, stuffed olives and chopped feta cheese.
The dressing is made from a crushed garlic clove, virgin olive oil ,wine vinegar, salt and pepper. Fresh black and sea salt are good.
If you are not keen on garlic use a Dijon mustard.

Chicken Salad

This is my Chicken Salad recipe.
I like chicken as a meat and I often just use chicken breast without the skin as it is a very fat free meat. So good for the health and diet. This salad is a good salad to be part of a weight loss diet.
The salad has sliced new potatoes, fresh steamed runner beans and broccoli, radish,tomato, cucumber, chopped spring onions and pumpkin seeds.
If you want to loose weight avoid a dressing or just add some lemon juice or a wine vinegar.
The chicken is cut into strips and fried quickly in olive oil. Sprinkle over some spices or 5 spice dressing and serve.
Fresh herbs such as lemon thyme add more flavour.
