Ham and Corn Salad
Well even though the weather seems to be turning and Autumn is upon us we are still having salads. This is Ham and Corn Salad.This is a really quick meal.
In the centre of the plate my usual new potatoes and steamed broccoli.
The main salad element is sliced lettuce, mustard cress, yellow sliced pepper, chopped white onion and sugar free tinned corn. I topped with roast ham.
I made a dressing with olive oil, Dijon mustard, salt and pepper and red wine vinegar. Omit the oil or put in less to aim for a weight loss diet.
This salad would be good as a salad starter or as I have had it as main course salad.
