Cheese and Egg Salad


Well this is the next salad I made from in the fridge ingredients. It would be good as a main course or starter salad.
The ingredient that I really like is the LANCASHIRE CHEESE it is so tasty.
The salad consists of finely chopped radish, lettuce, grated carrot,chopped red onion, sliced and boiled new potatoes, chopped spring onions, one hard boiled egg per person and lots of crumbled Lancashire cheese sprinkled over the top of the salad. I think all the dressing needed is some fresh lemon juice sprinkled over the top.
It seems to be a healthy option for the vegetarian and has lots of fibre, plenty of good vitamins and nutrients.
Has anyone got a favourite cheese they can recommend?

Haggis Salad




Well the Haggis salad recipe I made this week was a recipe I invented on the spot using the ingredients in the fridge and freezer.

A few weeks ago I cooked a HAGGIS for tea and had it in a traditional way. However, the haggis is quite large and would feed 6 I expect . So I divided the cooked haggis into portions for the freezer. I like the savoury flavour of haggis it is very spicy and tasty.

In this salad I cooked sliced new potatoes and steamed some green runner beans and cauliflower at the same time.

I prepared lettuce, radish, tomato and celery for the salad. I put these ingredients as an outer circle on the plate leaving a hole in the middle.

In the middle I placed the sliced new potatoes. I put the cauliflower around the other salad. I put the cold haggis on top of the potatoes. I topped it off with the green beans.

To make this spicy I made a salad dressing of HEMP OIL , red wine vinegar, salt, black pepper and 1 teaspoon of hot garlic and chili sauce. I mixed this together and drizzled it onto the salad.

We enjoyed this refreshing spicy way to serve haggis

I like to use hemp oil for its flavour and its nutritional benefits of omega oils. I think this may be a better way of getting omega 3 than relying on fish oils from cod , which are threatened in the oceans. Ham and Egg Salad

I decided to make carrots the nutritional feature of this salad.

One of my favourite mustard is the one above you can make just what you need from the powder.

I have decided that we are not eating enough salad so we are going to have 1 or 2 salads per week so lots more posts here.
This Ham and Egg salad could be a starter or like we had, a full meal.
Ingredients
I washed,peeled and prepared Chinese leaves, tomato, cucumber, spring onions, radish, grated carrot, stuffed green olives and cooked green beans.
I arranged these on the plate to make a pattern, I always make patterns or abstract designs and I topped it with slices of good quality sliced ham and boiled free range eggs.
I did not do a dressing so it was very healthy.
Serve with crusty bread, mustard for the ham such as hot English mustard.

It was really tasty for a warm day.
Vegetarians leave out the ham and add some cottage cheese.
If you are on a weight control diet this Ham and Egg Salad recipe would provide you with roughage,minerals, vitamins and protein. I would recommend that you remove all fat from the ham. I always do. I have never liked fat.
