Tuna and Reds Salad

Imade this salad to go with fresh tuna.
I chose vegetables that were all shades of red
tomatoes
radish
red peppers
red onions
I put these on a contrasting black plate so the colours really stood out.
I made a dressing from,
1 tablespoon of olive oil mixed with 1 tablespoon of red wine vinegar and salt and pepper. I drizzled this over the salad .
This salad could be arranged onto a serving plate and topped with a piece of grilled fresh tuna or it could be served with other types of tuna. It would also go well with sword fish and any other meaty type of fish

Waldorf Salad

This is a really simple version of this famous salad.
Ingredients
1 large eating apple, cored, peeled and chopped finely
4 sticks of celery, washed, and sliced
1/2 cup--4 oz walnut, the broken into small pieces type
1 tub of low fat hazelnut yogurt
Method
Combine all the ingredients together adding the yogurt in spoonfuls until you get the consistency you want
Variations
Use a plain yogurt
Change the type of nuts such as hazelnuts, pecans and cashews

This salad is low fat on the dressing but still has a great flavour.

Chinese style salad

This Chinese style salad recipe was made to go with some white fish fried with 5 spice seasoning.
It is made from sliced red peppers, sliced Chinese leaves and Spring onions cut into rings and the green parts into sticks.
The salad dressing recipe was made from;
1 tablespoon of sesame oil
1 tablespoon of cider or white wine vinegar
1 teaspoon of real maple syrup
1/2 teaspoon of soy sauce
salt and pepper to taste
I mixed all these together and drizzled over the salad

Buffets, as part of a food buffet at a Party, BBQ or Banquet.

Just alter your presentation for each style of dining

Watercress and Sweet Orange and Pepper Salad

Watercress has been labeled in the England as one of those must have super foods. I was taught at school that it is a good source of iron in the diet so I have always eaten this. It is a good source for vegans and vegetarians who do not eat red meat.
This is a recipe for Watercress and sweet orange and pepper salad
Ingredients
Watercress washed and chopped and on the first layer.
Take 4 Chinese leaves,wash, slice into bite size pieces and put on the watercress 1 yellow pepper seeds removed and sliced finely.
2 tomatoes chopped
1 orange or 2 clementines to garnish around the plate.
Balsamic Dressing
1 tablespoon of balsamic vinegar
1 tablespoon of virgin olive oil
salt and pepper
1 teaspoon of Dijon mustard( this is a smooth French mustard
Method
Mix all these together and drizzle over the salad and serve.
This goes well with fish and quiche.

Watercress and mixed vegetable salad

This is a salad using Watercress as the basis. The recipe for this salad contains a good selection of seasonal vegetables and the dressing with whole grain mustard is sharp and spicy.
Ingredients
Watercress, washed and chopped and put as the base layer.
6 Chinese leaves washed and chopped fine.
1 red onion diced very fine
4 tomatoes diced fine.
I like to arrange my salads as above so they are pleasing to the eye.
Chilli Salad Dressing
1 tablespoon of olive oil
1 tablespoon of red or white wine vinegar
1 teaspoon of grained mustard
1/2 a fresh chilli chopped very fine
salt and pepper
1/2 teaspoon of granulated sugar
Mix everything together.
This dressing is like sweet and sour with a zap of hot chilli.
I serve as a starter or with Steak or chicken.

Broccoli and Grape Salad

This salad is a hot salad recipe using potatoes, grapes and broccoli topped off with a sweet salad dressing using honey.
Ingredients
Sliced boiled new potatoes hot
broccoli cut into small pieces and steamed till just cooked but firm and hot
black grapes
Method
Layer the salad with potatoes first, then the broccoli and then the grapes.
Cover with a Honey Salad Dressing made from;
1 tablespoon honey
1 tablespoon cider or sweet vinegar
1 tablespoon olive oil
1 tablespoon of grain mustard
salt and pepper
Mix all these together and pour over the hot salad.
Increase the quantities according to how much salad you make.
This goes well with lamb and chicken dishes.
