Folic Acid in a healthy Diet

In my Times newspaper 24 November 2006 there was an article that said that folic acid can help in the reduction of heart disease and strokes. Previous research has found that it can help some cancers and Alzheimer's disease. The sources of this folic acid ( vitamin B) are in the following foods, green leafy vegetables such as Brussels sprouts, broccoli, spinach and green beans, oranges, dried beans, peas and lentils. I am hoping to include more salad recipes which include these delicious foods and help us to have a healthy life style and healthy diet.

Carrot, Apple and Lemon Salad

Ingredients
2 grated carrots
2 apples cored and sliced
1 lemon, grate the rind finely and squeeze out the juice
2 tablespoons of sultanas
Mix the apple ,carrot , sultanas and lemon rind together
Dressing
The juice of the lemon
1 tablespoon of vinegar such as malt vinegar
2 tablespoons of olive oil
salt and pepper
1 teaspoon of sugar
Mix these together and toss the apples in the dressing first (this stops the apples going brown), add the other ingredients, put into the serving dish.
These can be arranged as individual salads with a mint leaf on each.

Carrot and Satsuma Salad Recipe

Ingredients
2 carrots grated
4 satsumas peeled and split
2 tablespoons of sultanas
Mix these together in a bowl and add the dressing.

The Dressing
2 tablespoons of olive oil
2 tablespoons of wine or cider vinegar
salt and pepper
1 teaspoon of grain mustard
Mix well together in a small container
Mix into the salad or drizzle over the salad in the serving dish. Enjoy

Winter Salads

Here in the U.K. Autumn is now giving way to Winter and a new season of fruits and vegetables are in the shops. What is good for a salad at this time of the year? Local products include carrots, cabbage, potatoes, broccoli and onions. Fruits are also important such as apples, pears and all types of berries. Imported items include satsumas, oranges, cranberries, blueberries and plums. It really is a good time of the year to make salad recipes.
